Chicken Caesar Pasta Salad

>> Thursday, March 6, 2008

This is an incredible salad. This is always a hit.

2 heads of romaine lettuce
4 frozen chicken breasts
1 bottle of Cardini's Casaer Dressing
1 bag of croƻtons
2 cups of Parmesan cheese shredded
4 cups of bowtie or spiral pasta

Boil the chicken in water and season salt for about 15 minutes or until done. Cook the pasta in water and salt until au dente. Cool Chicken and pasta (coat pasta in EVOO to prevent pasta from sticking together). Cut the chicken into little chunks. Cut the lettuce and mix with chicken, pasta, parmesan cheese, croutons, and casear dressing to taste. Serve with a a baguette...I use the canned Pillsbury Loaf it is great!

This salad is a meal all on its own.

I love this salad! (They have one at Pizza Factory). I also add fresh mushrooms if I have them. Yum!
