Buffalo Soup

we LOVE buffalo chicken wings in hot sauce, dipped in blue cheese dressing, with celery sticks on the side. if you do too, you'll like this soup.

2 cups COOKED chicken, shredded (a deli-roasted chicken comes in handy here sometimes -- and it's tastier, too)
2 T. butter
1 cup celery & its leaves, chopped
1 small onion, chopped
2 cans broth
1 1/2 cups milk
1 tsp. hot sauce (start w/ a little, add more to taste...)
1 1/2 cups shredded mozarella cheese
1 cup crumbled blue cheese
1/2 cup shredded parmesan cheese
1/3 cup flour

1)melt butter in soup pot. add celery/onion. cook until tender.
2)stir in broth, milk, & hot sauce
3)toss together cheeses and flour in a bowl. add gradually to soup, stirring to melt/thicken.
4)stir in chicken, heat through.
